  • 8 ounces spaghetti pasta
  • 3 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 cup marinara sauce (store-bought or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley for garnish (optional)

Substitution tips: If you don’t have sourdough or Italian bread, a sturdy whole wheat boule or even a large baguette sliced into thick rounds can work. For the pasta, feel free to use gluten-free spaghetti or any favorite long pasta shape. And if you don’t have fresh garlic, garlic powder (about 1 teaspoon) can be a quick substitute.

Instructions

  1. Preheat your oven to 375°F (190°C). Using a serrated knife, carefully cut the top off the round loaf of bread, about 1 to 1.5 inches from the top. Set the top aside. Hollow out the inside of the loaf, leaving about a 1-inch thick shell all around. Be sure not to puncture the bottom or sides.
  2. In a small bowl, mix the softened butter, minced garlic, olive oil, and Italian seasoning until well combined. Spread this garlic butter mixture evenly inside the hollowed-out bread bowl and on the cut top piece.
  3. Place the bread bowl and its top on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the bread is golden and slightly crisp. This step is key for a bread bowl that holds up to the sauce and spaghetti without getting soggy too fast.
  4. While the bread is baking, bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente (usually 8-10 minutes). Drain and set aside.
  5. In a saucepan, warm the marinara sauce over medium heat. Season with salt and pepper to taste, and stir in half of the Parmesan cheese. If you want a little extra richness, add a splash of olive oil or a small pat of butter here. This sauce is where all the magic happens, much like my dad’s simple lentil pots—comforting and full of flavor.
  6. Toss the cooked spaghetti with the warm marinara sauce until well coated.
