- 1 teaspoon honey or maple syrup
- 1 tablespoon lime juice (freshly squeezed is best)
- 2 green onions, thinly sliced (for garnish)

Instructions
- Start by prepping your chicken: cut the chicken breasts into evenly sized 1-inch cubes. This helps them cook uniformly and keeps things simple—no guesswork here.
- Place the chicken cubes in a large bowl. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, salt, and black pepper over the top. Use your hands or a spoon to toss until every piece is nicely coated. I always find that rubbing the spices in with my fingers helps the flavors stick better.
- Thread the chicken pieces onto your skewers, packing them close but not too tight. If you’re using wooden skewers, don’t forget to soak them beforehand to avoid burning on the grill.
- Heat your grill, grill pan, or broiler to medium-high heat. Place the skewers on and cook for about 4-5 minutes per side, turning once, until the chicken is golden and cooked through. You’re aiming for an internal temperature of 165°F, but if you don’t have a thermometer, just cut into a piece to check—it should be opaque and juicy.
- While the chicken cooks, mix together the bang bang sauce in a small bowl: combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Taste and adjust the heat or sweetness as you like. This sauce is where the magic happens—don’t skip it!
- Once the skewers are cooked, transfer them to a serving plate. Drizzle the bang bang sauce generously over the top, or serve it on the side for dipping (my kids are dip fanatics, so I often do both).
