- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder

- 1 1/2 cups buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup shredded sharp cheddar cheese
- 2 jalapeños, seeded and finely chopped
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, mix buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the cheddar cheese and jalapeños until evenly distributed.
- Lightly grease the waffle iron and pour the batter into it, spreading it evenly.
- Cook for about 5-7 minutes, or until the waffles are golden brown and crispy.
- Serve immediately with your favorite toppings.
