  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 pound ground pork or chicken
  • 1 cup finely chopped cabbage
  • 1/4 cup finely chopped green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili paste (adjust to taste)
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten

Feel free to swap out the protein or add more veggies based on what you have on hand. My go-to is ground chicken, but I’ve also used shrimp or beef with great results. For a vegetarian twist, tofu works beautifully as well.

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add the warm water and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.
  2. While the dough rests, prepare the filling. In another bowl, mix the ground meat, cabbage, green onions, soy sauce, sesame oil, chili paste, ginger, garlic, and egg until well combined.
  3. Divide the dough into small portions and roll each into a ball. On a floured surface, roll each ball into a thin circle, about 3 inches in diameter.
  4. Place a spoonful of filling in the center of each dough circle. Moisten the edges with water, fold over, and pleat to seal the dumplings.
  5. In a large skillet, heat the vegetable oil over medium heat. Add the dumplings in a single layer and cook without moving for 2-3 minutes until the bottoms are golden brown.
  6. Add 1/4 cup of water to the skillet and cover immediately. Reduce heat to low and steam the dumplings for about 5 minutes until the filling is cooked through.
  7. Uncover and cook for another minute until the water evaporates and the bottoms crisp up again. Remove and serve hot.

Cooking dumplings can be an art, but remember, each one doesn’t have to look perfect. It’s about the taste and the love you put into making them.
