- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 jalapeños, seeded and finely chopped
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: sliced green onions and crispy bacon bits for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Stir in the garlic and jalapeños, cooking for an additional 2 minutes.
- Add the chicken pieces to the pot, seasoning with salt, pepper, and smoked paprika. Cook until the chicken is browned on all sides, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.
- Stir in the heavy cream, cheddar cheese, and cream cheese, stirring continuously until the cheeses are fully melted and the soup is creamy.
- Adjust the seasoning with additional salt and pepper if needed. Let the soup simmer for another 5 minutes to fully incorporate all the flavors.
