Ingredients
Scale
- 2 cups sushi rice, cooked
- 1 pound salmon fillet, skin removed and diced
- 1/2 cup mayonnaise (substitute with Greek yogurt for a lighter option)
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 cup chopped green onions
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/4 cup nori seaweed sheets, shredded
- 1 tablespoon toasted sesame seeds
- 1 avocado, sliced for serving (optional)
These ingredients are straightforward and versatile. If salmon isn’t your thing, swap it out with tuna or any fish you prefer. The beauty of this recipe is its adaptability to what you have on hand, much like the meals I learned to make growing up in that lively apartment kitchen.
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with oil or cooking spray.
- In a small bowl, mix the rice vinegar and sugar until the sugar dissolves. Pour this over the warm sushi rice and fluff with a fork to combine. Spread the rice evenly in the prepared baking dish.
- In another bowl, combine the mayonnaise, Sriracha, soy sauce, and sesame oil. Add the diced salmon and half of the green onions, stirring gently to coat the salmon thoroughly.
- Spread the salmon mixture evenly over the rice layer in the baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the top begins to brown slightly.
- Remove from the oven and top with the remaining green onions, shredded nori, and toasted sesame seeds.
- Let it rest for a few minutes before serving, allowing the flavors to meld together beautifully. Serve with avocado slices on the side, if using.
This process is simple and rewarding, much like the meals I’ve learned to love and craft over the years. Each step is designed to make your life easier while bringing a taste of something truly special to your table.
