- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This step is a lifesaver for cleanup—trust me, messy counters are part of my kitchen life, but parchment keeps it manageable.
- In a large bowl, combine the chopped spinach, crumbled feta, shredded mozzarella, and Parmesan cheese. This mix is where the magic starts—feel free to sneak in extra cheese if your family loves it like mine does.
- Add the beaten egg to the cheese and spinach mixture. The egg acts as a binder, holding everything together so your crisps don’t fall apart mid-bite.
- Sprinkle in the flour, garlic powder, black pepper, and salt. Stir everything gently until well combined. If the mixture feels too wet, add a little more flour, a tablespoon at a time. My kitchen rule: it’s okay if it’s a bit messy; that’s how real cooking happens.
- Using a tablespoon or small cookie scoop, drop rounds of the mixture onto the prepared baking sheet. Leave about 1 inch between each crisp to allow for spreading.
