Instructions

  1. Start by making the pasta dough. On a clean surface, create a mound of flour and make a well in the center. Add the eggs, olive oil, and salt. Gradually mix the flour into the wet ingredients until a dough forms.
  2. Knead the dough for about 8-10 minutes until it’s smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.
  3. While the dough rests, melt butter in a skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
  4. Add the chopped mushrooms and cook for 5 minutes until they’re soft. Stir in the spinach and cook until wilted. Season with salt, pepper, and nutmeg.
  5. Transfer the mixture to a bowl and let it cool slightly. Stir in the ricotta and Parmesan cheeses. Mix well and taste to adjust seasoning if needed.
  6. Roll out the dough on a floured surface to about 1/8-inch thickness. Cut into squares or circles, depending on your preference.
  7. Place a spoonful of filling onto each piece of dough. Brush the edges with the beaten egg and fold to seal, pressing out any air.
  8. Bring a pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface.
  9. Serve with your favorite sauce or a simple drizzle of olive oil and extra Parmesan.
