  • 20 jumbo pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo shells according to package instructions, then drain and set aside.
  3. In a large bowl, mix the ricotta, chopped spinach, egg, mozzarella, Parmesan, garlic powder, Italian herbs, salt, and pepper until well combined.
  4. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  5. Stuff each shell with a generous spoonful of the ricotta and spinach mixture, then place them in the baking dish.
  6. Pour the remaining marinara sauce over the shells and sprinkle with extra mozzarella if desired.
  7. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Let it cool slightly before serving. Enjoy!
