- 1 pound ground beef (or turkey for a lighter version)
- 1 cup fresh spinach, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces mozzarella cheese, cut into small cubes
- 2 tablespoons olive oil
- Optional: Marinara sauce for serving
You can swap the ground beef for turkey if you’re looking for a leaner option. And if you’re out of Italian seasoning, a mix of dried basil and oregano will do the trick.

- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan, egg, Italian seasoning, salt, and pepper. Mix until fully combined.
- Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center and wrap the meat around it, forming a ball. Repeat with the remaining mixture.
- Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, about 5 minutes total, then transfer them to the prepared baking sheet.
- Bake the meatballs in the preheated oven for 10-12 minutes, until cooked through and the cheese is melty and gooey.
- Optional: Warm the marinara sauce in a small saucepan over low heat and serve alongside the meatballs.
