Irresistible Spinach Garlic Meatballs That Will Elevate Your Dinner Game

Learn how to make delicious Spinach Garlic Meatballs. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound ground beef (you can substitute with ground turkey or chicken for a leaner option)
  • 1 cup fresh spinach, finely chopped (frozen spinach, thawed and squeezed dry, works too)
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if needed, or crushed crackers as a substitute)
  • 1/4 cup grated Parmesan cheese (optional but highly recommended for flavor)
  • 1 large egg
  • 1/4 cup milk (dairy or your favorite plant-based milk)
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano and basil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Start by preheating your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it. This is my go-to method because it cuts down on cleanup, which is a lifesaver when you’re juggling kids and dinner.
  2. In a large bowl, combine the ground beef, finely chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, milk, Italian seasoning, salt, and pepper. Use your hands to gently mix everything together—don’t overwork the meat or the meatballs will get tough. I remember the first time I realized this; it was a game-changer!
  3. Once everything is combined, shape the mixture into 1 1/2-inch meatballs. You should get around 20 meatballs. If you have little helpers at home, this is a great step for getting the kids involved—they love the hands-on part (and it keeps them busy!).
  4. Heat olive oil in a large skillet over medium heat. Working in batches, brown the meatballs on all sides for about 5-6 minutes. They don’t need to cook through at this point—just get a nice golden crust. This step adds flavor and helps hold the shape.
  5. Transfer the browned meatballs to your prepared baking sheet. Pop them in the oven and bake for 12-15 minutes, or until cooked through (internal temperature should reach 160°F). I usually check a couple to make sure they’re juicy and perfectly done.
  6. Remove the meatballs from the oven and let them rest for a few minutes before serving. This little pause lets the juices redistribute, making each bite tender and flavorful.
