- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup warm water
- 1/2 cup warm milk
- 1/4 cup honey
- 2 tablespoons unsalted butter, melted
- 2 teaspoons active dry yeast
- 1 teaspoon salt
- 1 tablespoon cocoa powder
- 1 tablespoon instant coffee granules
- 1 tablespoon molasses
- Cornmeal for dusting
Instructions
- In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the warm milk, honey, melted butter, and molasses. Stir in the frothy yeast mixture.
- Add in the cocoa powder, instant coffee granules, and salt. Mix until well combined.
- Gradually add the whole wheat flour and all-purpose flour, mixing until a dough forms.
- Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and shape it into a loaf. Place it on a baking sheet dusted with cornmeal.
- Cover the loaf and let it rise for another 30 minutes.
- Preheat your oven to 375°F (190°C). Bake the bread for 25-30 minutes or until it sounds hollow when tapped.
- Allow the bread to cool on a wire rack before slicing and serving.
