- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 1 cup shredded Monterey Jack cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: 1 teaspoon paprika for a smoky kick
Instructions
- Preheat your oven to 375°F. Season the chicken breasts with salt, pepper, and garlic powder.
- In a large ovenproof skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add sliced onions and mushrooms. Sauté until onions are translucent and mushrooms are browned, about 5 minutes.
- Sprinkle flour over the onions and mushrooms, stirring to coat. Slowly add the chicken broth and heavy cream, stirring constantly to prevent lumps. Allow the sauce to thicken for about 2-3 minutes.
- Return the chicken to the skillet, spooning the sauce over each piece. Top with shredded cheese.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the cheese is bubbling.
- Let it rest for a few minutes before serving. Enjoy the delightful blend of flavors!
