  • 12 rice paper wrappers (round, about 8 inches in diameter)
  • 1 cup shredded carrots (optional, for crunch and color)
  • 1/2 cup thinly sliced cucumber (optional, adds freshness)
  • 1 tablespoon vegetable oil (for cooking beef)
  • Fresh lime wedges, for serving
  • Optional dipping sauce: sweet chili sauce or a simple mix of soy sauce and lime juice

Instructions

  1. Start by prepping all your ingredients: mince the garlic, chop the onion, shred the carrots, and slice the cucumber. Having everything ready before cooking makes the process smooth, especially when your kitchen is as lively as mine.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent—about 2-3 minutes. I always make sure not to rush this step because it builds the flavor base.
  3. Add the ground beef to the skillet. Break it up with a wooden spoon and cook until browned and cooked through, about 6-8 minutes. Stir occasionally to get a nice even color.
  4. Once the beef is browned, stir in the soy sauce, fish sauce (if using), brown sugar, and black pepper. Cook for another 2 minutes, allowing the flavors to meld together. At this point, I like to taste and adjust seasoning—sometimes a splash more soy sauce or a pinch more sugar balances it out perfectly.
  5. Turn off the heat and fold in the fresh Thai basil leaves. The residual heat will wilt the basil just right, releasing that signature aroma without overcooking it.
  6. Prepare your rice paper wrappers by dipping one at a time in warm water for about 10-15 seconds until soft but still slightly firm. Lay them flat on a clean surface or cutting board.
  7. Place about 2-3 tablespoons of the beef mixture near the bottom edge of each wrapper. Add a small handful of shredded carrots and cucumber slices on top for some crunch and freshness.
