- 1 pound ground beef (or ground turkey for a lighter option)
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon fish sauce
- 1 tablespoon Sriracha (or more, depending on your spice preference)
- 1 teaspoon ground ginger
- 1/4 cup chopped fresh cilantro (plus more for garnish)
- 8 slider buns (mini brioche or whole wheat)
- Optional toppings: sliced cucumbers, shredded carrots, and lime wedges
Feel free to swap out any of the ingredients based on what you have on hand. For example, if you’re out of ground beef, ground chicken or even lentils can work beautifully in this recipe. Cooking should be about using what you love and keeping it simple, just like my mom taught me!
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it turns translucent, about 3-4 minutes.
- Add the minced garlic to the skillet, cooking for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground beef (or turkey). Break it up with a wooden spoon and cook until browned, about 5-7 minutes.
- Once the meat is cooked, drain any excess fat and return the skillet to the heat.
- Stir in the soy sauce, ketchup, brown sugar, fish sauce, Sriracha, and ground ginger. Let this simmer for about 5 minutes, allowing the flavors to meld.
- Remove the skillet from heat and stir in the chopped cilantro. Taste and adjust seasoning if needed.
- While the mixture cools slightly, toast your slider buns in the oven or on a pan until golden brown.
- Assemble your sliders by spooning the Thai Sloppy Joe mixture onto the bottom half of each bun. Add any optional toppings you desire, like cucumbers or carrots, for extra crunch and freshness.
- Place the top bun on each slider and serve immediately while they’re warm and delicious!
