Ingredients
Scale
The key to this dish lies in selecting the right ingredients, choosing quality over quantity to make each component shine.
- 4 tilapia fillets
- 2 large red bell peppers, roasted and peeled
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
If you can’t find fresh red peppers, jarred roasted red peppers work in a pinch. Coconut milk adds creaminess, but heavy cream is a good substitute if needed.
Instructions
- Preheat your oven to 375°F (190°C). Season the tilapia fillets with salt and pepper.
- In a blender, combine the roasted peppers, coconut milk, garlic, olive oil, and smoked paprika. Blend until smooth.
- Pour the sauce into a baking dish and lay the tilapia fillets on top, ensuring they are covered in sauce.
- Bake in the preheated oven for 20-25 minutes, or until the tilapia flakes easily with a fork.
- Garnish with fresh parsley before serving.
