  • 2 cups penne pasta
  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth or pasta water

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and oregano. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook until they start to soften, about 3 minutes.
  5. Stir in the spinach and cook until wilted, about 2 minutes.
  6. Reduce the heat to low and add the cooked pasta, reserved pasta water or chicken broth, and Parmesan cheese. Toss everything together until well combined and the cheese is melted.
