Ingredients
Scale
- 2 cups pineapple juice (fresh or 100% juice from the store)
- 1 1/2 cups mango juice or mango nectar
- 1 cup light rum (adjust according to preference)
- 1/2 cup freshly squeezed lime juice (about 3–4 limes)
- 1/4 cup simple syrup (see note below for easy homemade version)
- 1 cup sparkling water or club soda (adds a refreshing fizz)
- Ice cubes, as needed
- Fresh pineapple slices and mango chunks for garnish
- Optional: fresh mint leaves for garnish
Substitutions and tips: If you don’t have mango juice, feel free to use more pineapple juice or even orange juice for a slightly different twist. For a non-alcoholic version, simply skip the rum and add an extra splash of sparkling water or ginger ale. I usually keep a small batch of simple syrup in my fridge—just equal parts sugar and water, heated until sugar dissolves—and it’s a lifesaver for quick drinks like this.
Instructions
- Start by chilling all your juices and sparkling water in the fridge. Cold ingredients make the punch taste fresher and keep it cool longer, which is a lifesaver when you’re serving outdoors.
- In a large pitcher or punch bowl, combine the pineapple juice, mango juice, and freshly squeezed lime juice. Stir gently to blend the flavors.
- Add the light rum and simple syrup to the juice mixture. Give everything a good stir so the sweetness and alcohol meld together smoothly. I’ve found that stirring for about 30 seconds helps balance the flavors without overdoing it.
- Just before serving, add ice cubes to the pitcher or individual glasses to keep the punch nice and cool.
- Top off the punch with sparkling water or club soda for a refreshing fizz. This step is where the punch really comes alive—don’t skip it!
- Garnish with fresh pineapple slices, mango chunks, and if you like, a few mint leaves for that extra pop of color and aroma. I always sneak a little mint from my windowsill garden when I can—it makes the drink feel a bit fancier, even if the kitchen is a mess behind me.
- Serve immediately and enjoy! If you need to keep it for a short time, cover and refrigerate, then add sparkling water and ice just before serving again.
