- 1 cup frozen strawberries
- 1/2 cup frozen pineapple chunks
- 1/2 cup canned coconut milk (full-fat for creaminess, or light for fewer calories)
- 1/2 cup plain Greek yogurt (or dairy-free yogurt to keep it vegan)
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
- 1/2 cup orange juice (freshly squeezed if possible)
- 1/2 teaspoon vanilla extract
- Ice cubes, as needed for thickness
If you’re short on frozen fruit, fresh works too—just add a few more ice cubes to keep it nice and cold. I often swap out the pineapple for mango or add a handful of spinach for a green boost that my kids never even notice. Trust me, the coconut milk is what makes this smoothie sing, so don’t skip it!
Instructions
- Gather all your ingredients. I like to prep ahead by freezing extra fruit, so it’s ready whenever I need a quick smoothie fix.
- In a blender, add the frozen strawberries, frozen pineapple chunks, and coconut milk. Blend on high for about 30 seconds until you get a smooth, creamy base.
- Add the Greek yogurt, orange juice, vanilla extract, and honey or maple syrup if using. Blend again until everything is fully combined. The consistency should be thick but pourable.
- If the smoothie is too thick, add a splash more orange juice or a few ice cubes and blend again. If it’s too thin, toss in a handful of ice or more frozen fruit.
- Taste and adjust sweetness if needed. Sometimes the strawberries or pineapple are sweeter or tarter depending on the season, so I always give it a quick taste test.
- Pour into your favorite glass or a to-go cup if you’re rushing out the door. I always double-check if the kids want one too—most days, they do!
One quick note from my experience: don’t rush the blending. I used to get impatient and end up with chunky bits that my kids would complain about. Taking an extra 15 seconds to blend until silky smooth makes all the difference. Plus, it’s a nice mini moment of calm before the day takes off.
