Ingredients
Scale
- 1 pound ground beef (preferably 80/20 for juiciness)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon (trust me on this—it adds warmth)
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 large flatbreads or lavash wraps (store-bought or homemade)
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 cucumber, thinly sliced or shredded
- 2 medium tomatoes, sliced
- 1/4 cup fresh parsley, chopped
- Optional: 1/4 cup crumbled feta cheese
Substitutions: If you want to lighten it up, swap ground beef for ground turkey or chicken. No Greek yogurt? Use sour cream or a dairy-free alternative. And if you can’t find flatbread, tortilla wraps work just fine.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. This is where your kitchen starts smelling like something special—one of my favorite moments!
- Add the minced garlic and cook for another 30 seconds until fragrant. Don’t let it burn; garlic can go from perfect to bitter in a blink.
- Increase the heat to medium-high and add the ground beef. Break it apart with a wooden spoon as it cooks, stirring frequently until fully browned, about 7-8 minutes.
- Sprinkle in the cumin, smoked paprika, cinnamon, oregano, salt, and pepper. Stir well to coat the beef evenly with the spices. The cinnamon is subtle but adds a cozy depth that always surprises guests in the best way.
- Reduce heat to low and let the beef mixture simmer for 5 more minutes, allowing the flavors to meld. If the pan looks dry, add a splash of water, but don’t drown it—juicy but not soggy is the goal here.
- Meanwhile, mix the Greek yogurt with lemon juice in a small bowl. This quick sauce brings a bright tang that cuts through the richness of the beef, a trick I learned from my mom’s tomato magic.
- Warm your flatbreads in a dry skillet or microwave for about 20 seconds until pliable. I find that warm bread just makes the whole wrap feel more inviting and less like a sad sandwich.
- Assemble the wraps by spreading a generous spoonful of the yogurt sauce on each flatbread. Top with the spiced beef, then layer on cucumber slices, tomato slices, fresh parsley, and if you’re feeling fancy, a sprinkle of feta cheese.
- Roll up the wraps tightly but gently—no need to overstuff, or they get messy faster than you can say “family dinner.”
- Serve immediately, or wrap in foil for an easy lunch on the go.
From my own kitchen chaos to yours, these steps aren’t about fuss but about making something flavorful and family-approved without the headache.
