Ingredients
Scale
- 1 pre-made pizza crust (or make your own if you’re feeling adventurous!)
- 1 cup cooked chicken breast, shredded or diced
- 1/2 cup tzatziki sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
If you’re missing some ingredients, don’t worry! For the chicken, you can use rotisserie or even leftover grilled chicken. No tzatziki on hand? A blend of Greek yogurt, cucumber, garlic, and lemon juice works wonders.
Instructions
- Preheat your oven to 425°F. If you’re using a pizza stone, place it in the oven as it heats.
- On a lightly floured surface, roll out your pizza crust to your desired thickness. Transfer it to a baking sheet or pizza peel.
- Brush the crust with olive oil and sprinkle with dried oregano, salt, and pepper. This step adds a flavorful base for your toppings.
- Spread the tzatziki sauce evenly over the crust, leaving a small border for the crust.
- Top with shredded chicken, mozzarella cheese, red onion, cherry tomatoes, and cucumber.
- Carefully place the pizza in the oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes before slicing. Enjoy the comforting aroma wafting through your kitchen!
Pro tip: If your kids are like mine and love to help, let them sprinkle the toppings. It’s a fun way to get them involved and excited about eating their creations.
