  • 1 cup shredded lettuce or mixed greens
  • 1 medium tomato, diced
  • 1/2 cup shredded cheddar or mozzarella cheese (optional)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro or parsley
  • For the secret sauce:
    • 1/2 cup mayonnaise (use Greek yogurt for a lighter twist)
    • 2 tablespoons ketchup
    • 1 tablespoon Dijon mustard
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon garlic powder
    • 1 teaspoon honey or maple syrup
    • Salt and black pepper to taste

Instructions

  1. Start by preparing the secret sauce. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, smoked paprika, garlic powder, and honey until smooth. Taste and season with salt and pepper. This sauce is the magic that brings everything together, so don’t skip this step!
  2. Warm your tortillas briefly in a dry skillet over medium heat for about 20 seconds on each side. This makes them more pliable and easier to roll without tearing.
  3. Lay each tortilla flat and spread about 2 tablespoons of the secret sauce evenly over the center, leaving a little margin around the edges.
  4. Layer the shredded chicken, lettuce, diced tomato, red onion, cheese (if using), and fresh herbs on top of the sauce. I like to pile it high because, well, leftovers are a rarity in my house!
  5. Fold the bottom edge of the tortilla over the filling, then fold in the sides, and roll tightly to enclose everything. If you’re making these ahead, wrap them in parchment paper or foil to keep them together.
  6. If you want a warm wrap, place the rolled wraps seam-side down in a skillet over medium heat for 2-3 minutes per side, until lightly browned and the cheese melts.
  7. Slice in half diagonally and serve immediately with extra secret sauce for dipping.
