- 4 boneless, skinless chicken breasts
- 1 medium apple, thinly sliced (Granny Smith works great for its tartness)
- 4 ounces brie cheese, sliced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup chicken broth
- 2 tablespoons unsalted butter
If you’re missing thyme, rosemary makes a lovely substitute. And if you’re feeling adventurous, swap the apple for pear for a twist.
Instructions
Here’s how you can create this dish right in your own kitchen, with a few of my personal tips thrown in for good measure:
- Preheat your oven to 375°F (190°C) and grease a baking dish with a bit of olive oil.
- Using a sharp knife, cut a pocket into each chicken breast. Be careful not to cut all the way through.
- Season the chicken inside and out with thyme, garlic powder, salt, and pepper.
- Stuff each chicken breast with slices of brie and apple, then secure them with toothpicks.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 3 minutes on each side until golden brown.
- Transfer the chicken to the baking dish. Pour chicken broth over the top and dot with butter.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
- Remove toothpicks before serving. Let the chicken rest for a few minutes to allow the juices to redistribute.
