- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup apple cider
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce
For those of you digging through the pantry and realizing you’re out of cinnamon, nutmeg, or vanilla, don’t stress. My mom always taught me to improvise. Pumpkin pie spice can stand in for cinnamon and nutmeg, and a dash of almond extract adds a nice twist if you’re out of vanilla!
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy, about 3 minutes. This step reminds me of the times I’d sneak licks of butter and sugar off the beaters as a kid!
- Beat in the egg until well combined, then add the apple cider and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, spread a generous amount of caramel sauce on the flat side of half the cookies. Top with the remaining cookies to form sandwiches.
And there you have it! A little bit of time, a whole lot of flavor, and a treat that feels like a hug from the inside out.
