When I first started experimenting with this recipe, I wanted to ensure it was accessible, using ingredients you likely already have at home. Here’s what you’ll need:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups peeled, sliced apples (Granny Smith or Honeycrisp work well)
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup cold butter, diced
If you’re out of graham crackers, digestive biscuits make a great substitute. And don’t worry if you don’t have Granny Smith apples; any tart variety will do the trick.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of your prepared pan to form the crust.
- In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the vanilla extract and eggs, one at a time, beating well after each addition.
- Pour the cream cheese mixture over the crust, spreading it evenly.
- In another bowl, toss the apple slices with brown sugar and cinnamon. Spread them over the cheesecake layer.
- For the crumble topping, combine flour, oats, and cold butter. Use your fingers to mix until it resembles coarse crumbs. Sprinkle over the apples.
- Bake for 50-60 minutes, or until the center is set and the topping is golden brown. Let it cool at room temperature for an hour, then refrigerate for at least 4 hours before serving.
