- 4 medium croissants, sliced open
- 4 ounces goat cheese, softened
- 2 medium apples, thinly sliced (Granny Smith or Honeycrisp work well)
- 2 tablespoons honey
- 1/4 cup arugula or spinach leaves

- Salt and pepper, to taste
If goat cheese isn’t your preference, feel free to substitute with cream cheese or ricotta. And if you’re out of arugula, baby spinach makes a great stand-in, adding a subtle peppery note to the sandwich.
Instructions
- Preheat your oven to 350°F (175°C). While the oven heats, place the croissants on a baking sheet and warm them for about 5 minutes. This will enhance their flakiness.
- Spread a generous layer of goat cheese on the bottom half of each croissant. The warmth of the croissant will make the cheese spread easily.
- Arrange the apple slices over the goat cheese layer. For an extra touch of sweetness, drizzle a bit of honey over the apples.
- Top with a handful of arugula or spinach leaves. Drizzle with olive oil and season with a pinch of salt and a crack of black pepper.
- Close the sandwiches with the top half of the croissants. Press gently to hold the layers together.
- Serve immediately while the croissants are still warm, and enjoy the wonderful blend of textures and flavors.
