- 12 oz pasta of choice (penne or fusilli work great)
- 8 oz block of feta cheese
- 1 pint cherry tomatoes
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional for a bit of heat)
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
If you’re out of olive oil, you can substitute with avocado oil. No cherry tomatoes? Try grape tomatoes or even canned diced tomatoes in a pinch. The beauty of this recipe lies in its flexibility, so feel free to make it your own.
Instructions
- Preheat your oven to 400°F (200°C). This is just enough time to get the kids to set the table—if they don’t argue about who has to do it.
- In a large baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes.
- Drizzle olive oil over the cheese and tomatoes. Sprinkle minced garlic, oregano, red pepper flakes, salt, and pepper evenly over everything.
- Bake in the oven for about 25-30 minutes, until the tomatoes have burst and the cheese is golden and melty.
- Meanwhile, cook the pasta according to package instructions. Once done, reserve ½ cup of pasta water, then drain the rest.
- Remove the baking dish from the oven. Using a fork, mash the feta and tomatoes together, creating a creamy sauce. Add the pasta and reserved pasta water, stirring until everything is well combined.
