Ingredients
This recipe is all about using what you have and making it work, just like my mom did with her pantry magic. Here’s what you’ll need:
- 8 ounces of pasta (penne or fusilli work great)
- 8 ounces of feta cheese, block form
- 1/4 cup olive oil
- 1 lemon, zested and juiced
- 2 cups cherry tomatoes
- 3 cloves of garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and pepper to taste
- Fresh basil leaves for garnish
If you’re out of cherry tomatoes, feel free to swap them for grape tomatoes or even a diced regular tomato. The feta can be replaced with goat cheese for a different creamy texture, and if you like a little more zing, add an extra squeeze of lemon juice before serving.
Instructions
Here’s where the magic—much like the culinary spells my mom used to cast—happens:
- Preheat your oven to 400°F (200°C).
- In a baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and minced garlic.
- Drizzle the olive oil over the feta and tomatoes, then sprinkle with oregano, red pepper flakes, salt, and pepper.
- Bake in the preheated oven for 25-30 minutes, until the tomatoes burst and the feta is golden and soft.
- Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
- Once the feta and tomatoes are done baking, remove from oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce.
- Add the cooked pasta to the dish and toss everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Finish with lemon zest and juice, stirring well to combine.
- Garnish with fresh basil leaves and serve immediately.
This dish is not just about following steps but about feeling the rhythm of your kitchen, just like dancing to an old tune while stirring the pot.
