If you’re missing something, don’t worry. Swap in some Gouda or Monterey Jack for a different flavor, or use gluten-free pasta if that’s your preference. Cooking is about adapting and making it work with what you have.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, until it turns a light golden color.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 3-5 minutes.
