Ingredients
Scale
- 2 cups rolled oats
- 1 cup mashed overripe bananas (about 2 large bananas)
- 1/4 cup honey (can substitute with maple syrup)
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts (optional)
- 1/4 cup chocolate chips (optional)
These ingredients are likely already in your pantry. And if not, they’re easy to find and affordable—because who has time for exotic ingredients on a busy weeknight?
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix the rolled oats, mashed bananas, honey, applesauce, vanilla extract, cinnamon, and salt until well combined. Stir in the walnuts and chocolate chips if using.
- Pour the mixture into the prepared baking dish, pressing it down evenly with a spatula.
- Bake for 25-30 minutes or until the edges are golden brown and the top is slightly firm to the touch.
- Allow the bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Slice into squares and enjoy!
These bars are forgiving, so feel free to experiment with add-ins like dried fruits or seeds. Cooking at home is about making it your own, after all.
