- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg

- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled
- 1/4 cup BBQ sauce
- Oil for frying
- Optional: chopped parsley for garnish
If you’re short on breadcrumbs, crushed crackers or oats can substitute in a pinch. No cheddar? Try mozzarella or even a pepper jack for some heat!
Instructions
Follow these simple steps, and you’ll have a delightful dish in no time.
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined. Don’t overmix to keep the meatballs tender.
- Fold in shredded cheddar cheese and crumbled bacon bits until evenly distributed.
- Shape the mixture into 1-inch meatballs, roughly the size of a golf ball.
- Heat a tablespoon of oil in a large skillet over medium-high heat. Once hot, add the meatballs in a single layer. Cook for about 4-5 minutes, turning occasionally until browned on all sides.
- Reduce the heat to low and brush each meatball with BBQ sauce. Cover the skillet and let the meatballs cook for an additional 5 minutes, allowing the sauce to caramelize slightly.
- Once cooked through, remove from heat and let them rest for a minute or two. Garnish with chopped parsley if desired.
