- 1 teaspoon smoked paprika

- Wooden or metal skewers
Feel free to swap out the chicken for tofu if you’re catering to vegetarians in your group, a trick my mom often used when we had unexpected guests.
Instructions
- Begin by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Cut the chicken breasts into 1-inch cubes. This size ensures they cook evenly and quickly.
- In a large bowl, mix together the BBQ sauce, olive oil, soy sauce, garlic powder, smoked paprika, and a pinch of salt and pepper.
- Add the chicken pieces to the bowl, ensuring they’re well-coated with the marinade. Let them sit for at least 20 minutes to soak up all those flavors.
- Preheat your grill to medium-high heat. If you don’t have a grill, a grill pan on the stove works just fine.
- Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks.
- Brush on additional BBQ sauce during the last couple of minutes for an extra punch of flavor.
