- 1 pound ground beef (substitute with ground turkey or chicken if preferred)
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup beef broth (or vegetable broth for a lighter flavor)
- 2 cups fresh spinach
- Optional toppings: chopped fresh parsley, crumbled feta cheese, or a dollop of Greek yogurt
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic, stirring frequently until fragrant, around 1 minute.
- Add the ground beef, breaking it up with a wooden spoon. Cook until browned, approximately 8 minutes. Season with smoked paprika, cumin, salt, and pepper.
- Push the beef mixture to one side of the skillet and add the diced sweet potatoes. Allow them to cook until they start to soften, about 10 minutes.
- Pour in the beef broth, stirring to combine. Let the mixture simmer for another 15 minutes, or until the sweet potatoes are tender.
- Fold in the fresh spinach and cook for an additional 2 minutes, just until wilted.
- Serve warm, garnished with your choice of toppings like fresh parsley, feta cheese, or Greek yogurt. Enjoy the cozy, comforting flavors!
