- 1 medium beetroot, peeled and chopped
- 1 ripe banana
- 1 cup frozen mixed berries
- 1 cup almond milk (or any milk of your choice)
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1/2 teaspoon vanilla extract
- Ice cubes (optional, for a thicker texture)
If you’re out of almond milk, feel free to substitute with regular milk or even coconut water for a tropical twist. The beauty of home cooking is in its flexibility, just like those nights when my mom would work her magic with whatever was in the pantry.
Instructions
- Start by prepping your beetroot. If you’re like me and love shortcuts, you can pre-steam or boil the beetroot in advance to soften it up.
- In a blender, combine the chopped beetroot, banana, frozen berries, and almond milk.
- Add in the chia seeds, vanilla extract, and honey or maple syrup if you prefer a sweeter taste. I often skip the sweetener because the banana and berries add enough natural sweetness.
- Blend all the ingredients on high speed until smooth. You might need to stop and scrape down the sides to ensure everything is well integrated.
- If the smoothie is too thick for your liking, add a bit more almond milk and blend again. For a thicker consistency, toss in a few ice cubes.
- Once everything is blended into a creamy, vibrant mixture, pour into glasses and serve immediately.
