- 2 cups Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce
- 1/4 teaspoon salt
If you don’t have Biscoff cookies, graham crackers with a pinch of cinnamon can be a great substitute. For a dairy-free version, feel free to swap the cream cheese with a plant-based alternative.
Instructions
- Preheat your oven to 325°F. Line a 9×9 inch baking pan with parchment paper, leaving some extra on the sides for easy lifting later.
- In a medium bowl, combine the crushed Biscoff cookies and melted butter. Press the mixture firmly into the bottom of your prepared pan to form the crust.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy, about 2 minutes.
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and salt.
- Pour the cream cheese mixture over the crust, spreading it evenly.
- Drizzle the caramel sauce over the top and use a knife to swirl it gently into the cheesecake mixture.
- Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
- Let the bars cool to room temperature before refrigerating for at least 3 hours or until fully set.
- Once chilled, lift the cheesecake out using the parchment paper and cut into bars.
