- 1 pound of beef sirloin, thinly sliced
- 2 tablespoons soy sauce

- 1 tablespoon dark soy sauce
- 1 teaspoon freshly ground black pepper

- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 12 ounces udon noodles, cooked according to package instructions
- 2 tablespoons water
- Optional: sliced green onions and sesame seeds for garnish
Feel free to swap the beef for chicken or tofu if that’s more your style, and if you’ve got a spare carrot or some snap peas lingering in the fridge, toss them in too. After all, home cooking is about using what you have and making it work beautifully.
Instructions
- In a bowl, combine the beef slices with soy sauce, oyster sauce, dark soy sauce, ground black pepper, and cornstarch. Let it marinate for at least 15 minutes. This step is crucial to infusing the beef with flavor and tenderizing it.
- Heat a large pan or wok over medium-high heat. Add 1 tablespoon of vegetable oil and stir-fry the marinated beef until it’s just cooked through, about 3-4 minutes. Remove the beef from the pan and set it aside.
- In the same pan, add the remaining tablespoon of oil. Stir-fry the onion, garlic, and bell pepper until they’re fragrant and slightly softened, about 2-3 minutes.
- Return the beef to the pan, along with the cooked udon noodles. Pour in the 2 tablespoons of water to help deglaze the pan and mix everything thoroughly, ensuring the noodles are well-coated in the sauce.
- Cook for another 2 minutes, allowing the flavors to meld together beautifully. Adjust seasoning if necessary.
- Serve hot, garnished with sliced green onions and sesame seeds if desired. Enjoy the warmth in every bite, and maybe even share a story or two while you eat.
