- 1 pound beef sirloin, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon freshly ground black pepper
- 1 tablespoon soy sauce
- 1 tablespoon unsalted butter
- 1 teaspoon salt
- 1 teaspoon fresh parsley, chopped (for garnish)
When it comes to substitutions, you can easily swap sirloin with ribeye or tenderloin. And if parsley isn’t your thing, a sprinkle of chives or even a hint of rosemary can add a different dimension.
Instructions
- Start by patting the beef cubes dry with paper towels. This helps them brown nicely in the pan.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the beef cubes in a single layer, being careful not to overcrowd the pan. Sear them for about 2 minutes on each side until browned.
- Lower the heat to medium and add the minced garlic. Stir for about 30 seconds, just until fragrant. Be careful not to burn the garlic as it can turn bitter.
- Sprinkle the black pepper and salt over the beef, then pour in the soy sauce. Stir everything together, allowing the flavors to meld.
- Add the butter to the pan, allowing it to melt and coat the steak bites, creating a beautiful glossy finish.
- Remove from heat and garnish with fresh parsley before serving.
