- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated

- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

- In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side, or until they’re golden brown and cooked through. Remove them from the pan and set aside.
- In the same skillet, reduce the heat to medium and add the garlic and ginger. Sauté for about 1 minute until fragrant.
- Pour in the bourbon, soy sauce, honey, and apple cider vinegar. Stir in the blackberries and bring the mixture to a gentle simmer. Let it cook for about 5 minutes, allowing the flavors to blend beautifully.
- Return the chicken to the skillet, nestling it into the sauce. Cover and let it simmer for another 10 minutes, or until the chicken is tender and juicy, absorbing the flavors of the sauce.
- To thicken the sauce, add the cornstarch mixture and stir well. Cook for an additional 2-3 minutes until the sauce reaches your desired consistency.
- Give it a final taste and adjust the seasoning if necessary. If you like a little more kick, add a sprinkle of crushed red pepper flakes.
