Spice Meets Cream: Irresistible Blackened Cajun Chicken Alfredo

Learn how to make delicious Blackened Cajun Chicken Alfredo. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 2 tablespoons olive oil
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

If you’re short on time, you can substitute the fettuccine with any pasta you have on hand. And if heavy cream feels too indulgent, half-and-half can be a lighter alternative. The beauty of home cooking is its adaptability, after all!

Instructions

  1. Start by bringing a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breasts generously with Cajun seasoning, pressing the spices into the meat.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they’re cooked through and have a nice blackened crust. Remove the chicken from the skillet and let it rest on a cutting board.
  4. In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream, bring it to a gentle simmer, and stir in the Parmesan cheese. Continue stirring until the cheese has melted and the sauce is smooth and creamy.
  6. Add the cooked fettuccine to the skillet, tossing it gently to coat with the Alfredo sauce. Season with salt and pepper to taste.
  7. Slice the rested chicken into strips and lay them over the pasta. Garnish with chopped parsley if desired, and serve immediately.

Remember, cooking is about tasting as you go. Don’t be afraid to adjust the seasoning or add a little more cheese if that’s what your heart desires. After all, every kitchen has its own rhythm, much like the noisy dinners at my childhood home.
