- 8 slices of your favorite bread (sourdough works wonders)
- 1 cup fresh blueberries
- 1 tablespoon honey (or maple syrup for a vegan option)
- 8 ounces brie cheese, sliced
- 2 tablespoons butter (or vegan butter as a substitute)
- 1 teaspoon lemon zest
Feel free to substitute the brie with cream cheese if you prefer a milder flavor, or add a sprinkle of cinnamon to the blueberries for a warm, spiced twist.
Instructions
- Begin by heating a small saucepan over medium heat. Add the blueberries and honey, stirring occasionally until the blueberries start to burst and form a sauce, about 5 minutes. Stir in the lemon zest and set aside.
- Butter one side of each bread slice. This will be the side that gets grilled to golden perfection.
- On the unbuttered side of half the bread slices, layer slices of brie cheese.
- Spoon the blueberry mixture over the cheese, spreading it evenly.
- Top with the remaining bread slices, buttered side up.
- Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
- Remove from the skillet, let them cool for a minute, and then slice and serve.
