- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries (frozen can be used in a pinch)
- 4 large eggs
- 1 cup milk
- 1 teaspoon ground cinnamon
- 2 tablespoons butter for greasing the pan
- Maple syrup and extra blueberries for serving
Instructions
- In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Spread the cream cheese mixture generously on four slices of bread. Top with a handful of blueberries, then sandwich with the remaining bread slices.
- In a shallow dish, whisk together eggs, milk, and cinnamon until well combined.
- Heat a large skillet over medium heat and add butter to coat the pan.
- Dip each sandwich into the egg mixture, ensuring both sides are soaked, then place on the skillet.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Serve immediately with maple syrup and a sprinkle of fresh blueberries.
