- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon lemon zest (about one lemon)
- 1 cup unsalted butter, cold and diced
- 1 large egg
- 2 cups fresh blueberries (or frozen, if that’s what you have)
- 1 tablespoon cornstarch
- 1/4 cup lemon juice
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a medium bowl, mix together the flour, sugar, baking powder, and salt. Stir in the lemon zest.
- Add the cold, diced butter and the egg into the flour mixture. Use a pastry cutter or your hands to blend until the mixture resembles coarse crumbs. Remember, a little mess is part of the fun!
- Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, combine the blueberries, cornstarch, and lemon juice. Toss to coat the berries evenly.
- Spread the blueberry mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture over the blueberries, covering them as best as you can.
- Bake in the preheated oven for about 45 minutes, or until the top is golden brown and the blueberries are bubbling.
- Allow the bars to cool completely before cutting them into squares. Trust me, the wait is worth it!
