- 2 tablespoons olive oil
- 1 pound chicken breast, sliced into strips
- 2 tablespoons Cajun seasoning
- 1 onion, finely chopped
- 1 bell pepper, diced (any color)
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 ounces spaghetti
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips, sprinkle with Cajun seasoning, and cook until golden brown, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the onion and bell pepper. Sauté for 3-4 minutes until they start to soften. Stir in the garlic and cook for an additional minute, taking care not to burn it.
- Pour in the chicken broth and bring to a simmer. Add the spaghetti and cook until almost tender, about 8 minutes, stirring occasionally to ensure it doesn’t stick.
- Reduce the heat to low and stir in the heavy cream. Let it simmer gently until the spaghetti is fully cooked and the sauce has thickened, about 5 minutes.
- Return the chicken to the skillet, along with any juices. Stir in the Parmesan cheese until it melts into the sauce. Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
