  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup milk (substitute with almond milk for a dairy-free option)
  • 1 tablespoon butter

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the orzo to the pot and stir to coat it in the oil and garlic. Toast the orzo for about 2 minutes, stirring frequently.
  3. Pour in the chicken or vegetable broth and bring to a gentle boil. Lower the heat, cover, and let it simmer for 8-10 minutes until the orzo is tender and most of the liquid is absorbed.
  4. Stir in the broccoli florets, cover, and cook for an additional 3-4 minutes until the broccoli is tender but still vibrant green.
  5. Reduce the heat to low and add the shredded cheddar cheese, milk, butter, salt, and pepper. Stir until the cheese is melted and the orzo is creamy.
  6. Remove from heat and let it sit for a couple of minutes to thicken up a bit more before serving.
