Let’s dive into the ingredients, keeping it as simple as my mom’s magic with a can of tomatoes.
- 1 box of brownie mix (and the ingredients it calls for, usually eggs, water, and oil)
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1 tablespoon unsweetened cocoa powder
- 1 pint fresh strawberries, hulled and sliced
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
Feel free to substitute the fresh strawberries with frozen ones if you’re making this out of season. The frozen ones work just as well, especially once thawed.
Instructions
Time to get our hands a little dirty! Here’s how you whip up this delightful dessert.
- Preheat your oven to the temperature specified on the brownie mix box. Prepare the brownie mix as per the instructions, then pour it into a greased baking pan and bake until a toothpick inserted into the center comes out mostly clean.
- While the brownies are baking, heat the heavy cream in a saucepan over medium heat. Just before it starts to boil, remove it from the heat and pour it over the chocolate chips in a heat-proof bowl. Stir until the chocolate is fully melted and the mixture is smooth.
- Add the cocoa powder and vanilla extract to the chocolate mixture, stirring to combine. Let it cool to room temperature.
- Whip the chocolate mixture until light and fluffy to create a mousse texture. This should take about 5-7 minutes using an electric mixer.
- Once the brownies are done and slightly cooled, cut them into small squares and layer them at the bottom of serving glasses or bowls.
- Top the brownie layer with the chocolate mousse, followed by a layer of sliced strawberries.
- Repeat the layers if you have enough space in your serving dish, finishing with a few strawberry slices on top for decoration.
Remember, my kitchen is all about adjusting as you go—if the kids are impatient, a little less chilling of the mousse is perfectly fine!
