- 1 pre-made pizza crust (or homemade if you’re feeling ambitious!)
- 1 cup BBQ sauce (your favorite brand or homemade)
- 2 cups cooked chicken breast, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup sweet corn kernels (fresh or canned)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Feel free to substitute the mozzarella with a cheese blend or add some sliced jalapenos for an extra kick. Remember, cooking is about making it your own.
Instructions
- Preheat your oven to 425°F (220°C) and place the pizza stone or baking sheet inside to heat up.
- In a medium bowl, toss the shredded chicken with half of the BBQ sauce, ensuring it’s well coated.
- Roll out the pizza crust on a floured surface to your desired thickness. I prefer a thin crust for that crispy finish.
- Remove the preheated stone or sheet, brush it with olive oil, and carefully lay the crust on top.
- Spread the remaining BBQ sauce over the crust, leaving a small border for the crust.
- Evenly distribute the BBQ chicken, mozzarella cheese, red onion, and corn over the sauce.
- Sprinkle the smoked paprika over the top for that extra smoky flavor.
- Bake in the oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven and let cool for a couple of minutes before sprinkling with fresh cilantro.
- Slice and serve warm, enjoying the meld of flavors and the satisfaction of a meal well made.
