- 4 slices of your favorite bread (sourdough works wonders)
- 1 large onion, thinly sliced
- 4 strips of bacon
- 1 cup shredded cheddar cheese
- 2 tablespoons butter, softened
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: A dash of balsamic vinegar for the onions
Feel free to swap the cheddar for any melty cheese you adore. I’ve tried mozzarella and even a sharp provolone, each imparting its unique charm. As for the bread, anything sturdy enough to hold the filling will do just fine.
Instructions
- Heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and golden, about 15-20 minutes. If you’re feeling fancy, splash in some balsamic vinegar for added depth.
- Meanwhile, cook the bacon in another pan until crispy. Once done, let it drain on a paper towel to get rid of the excess grease.
- Butter one side of each bread slice generously. This is a trick my mom swore by for that perfect golden crust.
- Assemble the sandwich by layering cheese, caramelized onions, and bacon between two slices of bread, buttered sides out.
- Heat a clean skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
- Remove from heat, let cool for a minute or two, slice, and serve.
