- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 balls of burrata cheese
- 4 cups mixed greens (such as arugula and spinach)
- 1/4 cup toasted almonds
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
- Fresh basil leaves for garnish
If peaches aren’t in season, nectarines make a wonderful substitute. And if you can’t find burrata, fresh mozzarella will do the trick.
Instructions
- Start by heating a grill pan over medium heat. Brush the peach halves with olive oil and place them cut-side down on the pan. Grill for about 3-4 minutes, until the peaches are caramelized with lovely grill marks.
- Drizzle honey over the peaches while they’re still warm, letting the sweetness soak in. This step always reminds me of my mom’s knack for transforming simple ingredients into something special.
- Arrange the mixed greens on a large serving platter. Tear the burrata into pieces and distribute it lovingly over the greens.
- Place the caramelized peaches atop the salad, letting their juices mingle with the burrata and greens.
- Sprinkle toasted almonds for a delightful crunch, and drizzle the balsamic glaze over everything to tie the flavors together.
- Season with salt and pepper to taste, and garnish with fresh basil leaves for a burst of color and fragrance.
