Gathering the right ingredients is like setting the stage for a family story. Here’s what you’ll need:
- 1 and 1/2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 16 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup powdered sugar
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
Feel free to swap out the brown sugar for coconut sugar or add a handful of walnuts for a bit of crunch. Remember, cooking is all about making it your own!
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add the grated carrots, vegetable oil, eggs, and vanilla extract to the dry ingredients. Stir until just combined.
- Pour the carrot cake batter into the prepared pan and spread evenly.
- For the cheesecake layer, beat the cream cheese in a separate bowl until smooth. Add the sour cream, powdered sugar, lemon juice, and vanilla extract and continue to mix until creamy.
- Gently spoon the cheesecake mixture over the carrot cake layer, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until the cheesecake is set around the edges with a slight jiggle in the center. A little tip from my kitchen to yours: cover the top with foil if it browns too quickly.
- Allow the cake to cool completely in the pan before transferring it to the refrigerator to chill for at least 4 hours or overnight.
Every step is like a little love note to your family, and the end result is a gift wrapped in deliciousness.
