- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 cup unsalted cashews
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons hoisin sauce
- 2 green onions, sliced
- Salt and pepper to taste
If you’re in a pinch, you can swap chicken for tofu to keep it vegetarian or use almond slivers if cashews aren’t your thing.

Let’s get cooking, shall we? Follow these steps and you’ll have a delicious meal in no time.
- In a bowl, combine the chicken pieces with soy sauce, oyster sauce, and cornstarch. Let it marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the cashews and toast them until lightly browned. This should take about 2-3 minutes. Remove and set aside.
- Add the chopped bell pepper and garlic to the skillet. Sauté until the peppers are tender-crisp, about 3 minutes.
- Pour in the chicken broth and hoisin sauce, stirring to combine. Let it simmer for 2 minutes to thicken slightly.
- Return the chicken and cashews to the skillet, tossing to coat everything in the sauce. Cook for another 2 minutes, then add the green onions and give it a final stir.
- Season with salt and pepper to taste, and serve hot.
